How the Bottle Probe Works Allow the wine cellar enclosure to stabilize at the desired temperature for several days, approximately 72 hours. Fill a normal-size wine bottle with water, insert the bottle probe into the bottle, and place it in the cellar. Do not connect the bottle probe to the cooling unit until the bottle has cooled to the cellar temperature. Once connected to the outlet on the face of the unit, the bottle probe controls unit operation based on the liquid temperature inside the bottle. Unplugging the probe returns the system to the internal air sensor. The bottle probe cord is 5 feet long.
